What is Kachi Ghani? Why We Cook in Mustard Oil

10 August 2026

When you open a packet of namkeen, what is the first thing you smell? If it is a faint, neutral scent, it is likely fried in refined vegetable or palm oil. But if it is Hariram Namkeen, you are greeted by the sharp, warming aroma of pure Kachi Ghani mustard oil.

Here in Muzaffarnagar, we believe that what goes into our food defines our relationship with you. To us, “Grahak Dev Tulya”—the customer is equal to God. That is why we never compromise on our oil.

What is Kachi Ghani and Why Does It Matter?

”Kachi Ghani” simply means cold-pressed. It is the traditional method where mustard seeds are gently crushed at low temperatures using a heavy press. Because there is no high heat or harsh chemical solvents involved, the oil retains its natural nutrients, rich golden colour, and distinct, pungent taste.

In contrast, refined oils and palm oils go through intense industrial processing—bleaching, deodorizing, and chemical refining. From day one, large industrial brands chose these refined oils because they are cheap and extend shelf life for months on supermarket shelves. They did not switch away from mustard oil; they simply designed their businesses around industrial efficiency.

We chose a different path. Kachi Ghani mustard oil is expensive, and because it is unrefined, it has a shorter shelf life. But it brings a depth of flavour and digestive ease that refined oil can never match.

A Blend of Two Great Traditions

The craft of making namkeen originally traces its roots back to the dry sands of Rajasthan. At Hariram, we take that beautiful Rajasthani heritage and blend it with our own robust, spiced UP-style preparation right here in our Muzaffarnagar kitchen.

We make our namkeen in small, careful batches. Every spice we use is ground fresh in-house daily, rather than using pre-packaged industrial masalas. With our FSSAI license (Lic. 22725393001461), we ensure that honesty and hygiene go hand in hand. When you eat clean, you can taste the difference.
